I’d like to put “eat out” or “peanut butter and jelly” beside each line this week! Can I please?? I’m not going to. I’m going to push through the sludge in my brain (again) and plan our meals. It does help so much to have this plan made out… then when the 5:00 chaos hits, at least I know one thing… we do have to eat again… and this is what I have the ingredients to make!
Monday: Green Giant Complete Meal Skillet. (have you ever tried these! They are quick, easy, and wonderful!) Chicken Teriyaki.
Tuesday: Chicken Enchiladas, salsa, chips (from last weeks’ menu, that never got made)
Wednesday: Crock Pot Beef Stew. (if anyone has a good recipe for this I would love to try it!)
Thursday: Chicken Pot Pie
Friday: Cardboard pizza or eat out, before away Football game.
Weekend: Sloppy Joe, Hot Dogs, Mac and Cheese… bon-fire weather permitting!!
This is a really good recipe for Chicken Pot Pie:
Classic Pot Pie
1-15 oz pkg. Pillsbury pie crust
1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups chicken broth
2/3 cup milk
3 cups shredded chicken
2 cups frozen mixed vegetables (thawed)
Heat oven to 425. In sauce pan melt butter, saute onion. Cook 2 min. Stir in flour, salt & pepper, until well blended. Gradually stir in broth and milk. Stir constantly until bubbly and thickened. Add chicken and vegetables. Remove from heat. Put into crust and cover with other crust. Bake 30-40 minutes.

I need to plan out my meals too! I always wait til the last minute to decide what's for supper! Sounds like great meals to me!!
Good for you. Unfortunately, I've been sick all weekend and we're practically PB&J'ing it. Tonight Mark went and got KFC. Jacob ate it, and that's the first thing he ate today, so that was good. Your chicken pot pie sounds good. I love chicken pot pie!

I admire you for doing this each week. I used to plan for the month. It actually worked well...maybe I should get back on that train & I wouldn't stand in front of the fridge thinking "what's for dinner" every single night. Good gravy, I am home all day you would think that I could get it together before 5pm. Ugh. Procrastination at its greatest.
MeMi, that was totally me! Only I would have this moment of almost "shock" that we had to eat once again! Like I didn't see that one coming! Oh are we not mighty procrastinators!!
I plan my meals too mostly due to cost...I stick to my list grocery shopping if I know what I need but also I find it may take brainpower to plan it but for the next few weeks I don't have to think about what were eating.
We are also planning on having Crock Pot Stew on Wednesday, though we will use elk meat. I am trying a new recipe myself and if it's good I'll let you know.
Thanks for the heads up about the Green Giant meal...I also love the stir fry's but you have to add your meat. It will feed our family of 5.
This is a very good and easy stew recipe (for the oven)
Busy Day Stew
1 1/4 lbs. stew meat or roast
4 potatoes, cut in cubes
2 carrots,diced
2 cups celery,cut up
1 pkg. onion soup mix
1 cup chopped onion
1 can tomato soup
1 cup water
1/2 cup instant tapioca
salt & pepper to taste
Cut meat in small pieces. Add vegetables and soup mix. Mix with the soup, water, and tapioca. Put in a roaster with lid. Bake at 250degrees for 5-6 hours. Serves 6.
