Menu Plan Monday #9

mpmfall Wow! We have a quiet week coming up!  Football being officially over, for more than one reason... and basketball only in the practice mode... guess James won't be starting swimming now, will he?  Guess there goes him bringing Zach home from practice for me...  oh well!  I am going to enjoy the quiet weeks, because I have read the basketball schedule!

So here we go...

Monday:  Gourmet Chicken and Rice,  (see recipe below)  Green Beans, Bread

Tuesday:  Beef Enchiladas, chips, salsa, salad.

Wednesday:  Roast in the crock pot, potatoes, carrots, onions.  Muffins

Thursday:  Spaghetti w/meat.  Salad.  Bread

Friday:  Sausage, potatoes, sour kraut, green beans.

Weekend:  Chili Soup, grilled cheese.  and left-overs.

Gourmet Chicken and Rice

1- 3 lb. package of chicken breasts

1 can cream of mushroom

1 can cream of chicken

1 can cream of celery

Add 1/3 cup water to mixture of three soups. 

1 box of Uncle Bens Original Rice Mix.

Take 1/2 of the seasoning mix and add to the soups.

Place 1/3 of the soup mixture in the bottom of a greased 9 x 13.  Sprinkle dry rice (from mix) over top of soup.  Lay chicken breasts over top of rice.  Put rest of soup mix over chicken.  Sprinkle with 1/3 cup of parmesan, cover. 

Bake covered 2 1/2 hours.  @ 275.  Last 45 minutes uncover.

My grandmother used to make a recipe exactly like your chicken and rice, except we use plain white rice and Golden Mushroom soup instead of cream of mushroom. I've never seen another recipe like it. We also bake ours for 3 hours at 300. See? We are very similar. ;-) I just made it last week, I love it.

MMMMMmmmm. Your house sounds delicious this week. I'm excited for football season to be over too. I'm looking forward to seeing my daughter.

Ok, you have inspired me. I am so going to start menu planning. I am sick of looking in the fridge 10minutes before dinner & drawing blank. Your meals sound delicious!

Mmmmmm, I love sauerkraut!

I sure hope your James heals quickly. I'm beginning to think that I'm glad football isn't that big around here.

Ok, there's hockey too, and there's the added danger of frozen blades and rubber.

Maybe he'll take up tennis?

I keep forgetting about adding something I'll miss . . . but every day has been full of love and snuggles :)
